RUSSIAN SUMMER DRINKS AND DESSERTS

Let’s shed light on some traditional drinks and desserts in Russia in summer

Welcome to the new edition of Matryoshka’s Diary. This week our author Elena will share a few tips regarding what Russian desserts you should try this summer (while it still lasts!).
Kvas

My absolute favorite is kvas (a traditional Russian bread drink). I remember the times when it was sold «на розлив» in big metal storage reservoirs that could be easily found around the corner. When those improvised kvas pop-up stalls appeared on the streets it was clear to me that summer was around the corner. It’s the oldest drink in the country and is incredibly refreshing on a hot summer day. Many people make their own kvas from scratch – this will not take much time and it is healthier than a soda!

Kompot

Ask any Russian what drink you should have with lunch and chances are they will say kompot. This sweet drink is from fruit and can be served hot or cold. My favorite kompot is made with dried apricot and apple.

Mors

Mors is a cold beverage made from fresh or frozen berries. Its consistency is much like kompot, although a little thicker, as the boiled berries are mashed, whereas in kompot they are left whole. Some people would prefer not to have their berries mashed but to boil them and leave them out once done. Most often, mors is made of cranberries, lingonberries, blueberries, or a mix. My favorite is cranberry mors.
Kisel’

It is another traditional drink that is easy to make. The first question which will pop into your head when you first see kissel is whether you should drink it or eat it. It’s a very thick and nutritious juice that is cooked using berries and starch (to make it thicker).


Kefir

I am sure I don’t need to tell you about the benefits of fermented dairy beverages! Kefir might just become your new favorite drink! In Russia, we not only use Kefir as a drink but also use it as a base for pancakes and pies.

Home-made fruit/berry jam

Yes, we love our berries! To preserve them and enjoy them in summer we make jams from homegrown berries and fruit. Many Russian families have their own recipes for jam or varenje [варенье] (this is what we call jam in Russian). No shops can compete with the real homemade jams!


Eskimo on a stick

This extra-creamy ice cream covered with chocolate appeared in the 1930s at the initiative of Anastas Mikoyan, People’s Commissar for Food Industry. He believed that Soviet citizens would like it. And he wasn’t wrong!
Glazed cottage cheese bars

You might be surprised but Soviet children were often told that it was ice cream to stop them from eating cold stuff. In any case, glazed cottage cheese bars are much better!



Fairy floss

While this is not a traditional Russian dessert, it is a popular treat for children which can be found in nearly any Russian park in summer. Not a very healthy treat but who cares?
